simple vegan soups
Potato & Leek soup
olive oil
2 large leeks - washed and sliced small
1 large onion - chopped
1/2 tsp sea salt
3 cloves minced garlic
4 medium-large potatoes - peeled and cubed
5-6 cups veggie stock (I use vegata stock powder mixed with water)
1 tsp fresh rosemary - chopped as fine as possible
Saute leeks, onion & salt in olive oil for 5 minutes. Add garlic - cook 1more min. Add potatoes and stock, boil then reduce and cook for 20 minutes. Add rosemary and blend.
To blend soup, I just use my hand held bar mix and just blend in the pot that I have been cooking in. If you don't have a blender, just mush up the bits of potato with a masher - it doesn't look as professional but tastes just as good!
Pumpkin and coconut soup
olive oil
1.5 kg pumpkin - peeled, de seeded and diced
2 onions - finely chopped
1 tsp ginger - finely chopped
2 garlic cloves - minced
1 tbsp coriander (I just use the dried stuff)
400 ml can coconut milk
500ml veggie stock
salt & pepper
Heal oil, add onion, garlic, ginger - saute for a couple of minutes. add coriander and pumpkin, stir. Add coconut milk and stock, bring to boil, reduce and cook for 30 minutes. Blend (or mash like with the potato & leek soup) season with salt and pepper.
Moroccan tomato and chickpea soup
800g can of tomatoes
400g can of chickpeas
1 cup dried red lentils - rinsed
1 brown onion - diced
2 cloves garlic - minced
1 tsp ground coriander
1 tsp ground cardamom
5 cups veggie stock
Fry onion, garlic, cardamom and coriander in oil. Add stock and tomatoes - bring to boil. Add chickpeas and lentils - simmer until lentils have broken down - about 20-30 minutes.
Comment if you have any questions - all three are really simple to make although my instructions may be a little hard to understand!

Slowly getting there

I am slowly catching up on blog posts and emails - I feel a little overwhelmed but at the same time excited to se what you have all been up to - what did I miss? Also, if there is anyone new who would like to come along to our vegan knitting group but weren't able to make it to Albert Park, it is now in North Fitzroy, so if that makes it any easier for you, we would love to have you!

I must be nuts.....
..... because I knitted myself a skirt. I'm not 100% happy with it, although it fits well, I don't think it particularly suits my (slightly) curvy hips all that much - but at least I can say I did it, right?A little close up of my handiwork:

Another one!

Ok, so I have started a new blog. It's called little lost love, and it is all the little lost things that I want to blog about here, but don't feel like I should because I want to keep this blog just about vegan clothes and food and lifestyle and vintage stuff. It's mostly all the other stuff I love, photography, art and craft, music, films, and bit of the things I make too!

A little DIY
I made this skirt yesterday out of some floral corduroy fabric that I never thought I would use, I dismissed it as super-ugly when I first received it, but now, I think I like it!

What do you think, ugly or not??
Outfit details: Skirt - self made, top - can't remember, I do know that it was really old and really cheap!, navy tights - Obus, heels - Big W

That baking time of year
Over the weekend I played around with a scone recipe to make it vegan, gluten and sugar free. Four batches later, I think I have it!2 cups spelt flour
3 teaspoons baking powder
1 teaspoon salt
3/4 cup Soy Milk
about 50 grams Vegan margarine
1 tablespoon vanilla (I like lots!)
1 tablespoon Maple or Agave syrup
Combine dry ingredients then add margarine and kind of mash it into the mixture with a fork (does that make sense?!) Add wet ingredients and combine. Roll out onto a floured surface and break off small fist fulls to make the scones, makes about 10. Bake on an greased tray for 20 Minutes at 180 degrees Celsius. Best served with a good quality jam that doesn't contain added sugar and a big mug of Chai tea.

Shades of green and grey

I am really loving dark shades of green, so much so that I am in the process of knitting myself a green high waisted skirt (fingers crossed I have got it right and it will fit) and I am finding that I am moving more towards grey tights rather then the black that I lived in last winter.
Oh! and a vintage scarf works well with everything, no?
